Mysore pak is a rich, buttery Indian sweet or confection made primarily from gram flour, sugar, and generous amounts of ghee
Main components are gram flour (besan), sugar syrup, and ghee. Include additional ingredients like cardamom for flavor
The flavor is a harmonious balance of the nutty notes from the roasted gram flour and the rich sweetness of the caramelized sugar. The aroma of pure ghee is a defining characteristic
The sweet was invented in the early 20th century by Kakasura Madappa, the head chef at the Mysore Palace during the reign of Maharaja Krishna Raja Wadiyar IV.
The king was so impressed with the treat that he instructed Madappa to open a shop to make the sweet available to the public. That legacy is continued by Madappa's descendants today
When the king inquired about the new delicacy, Madappa named it Mysuru paka on the spot. The word paka comes from the Kannada word for a sweet concoction or sugar syrup
Originating from the royal kitchens of the Mysore Palace in Karnataka, it is known for its distinct texture and is a staple at weddings, festivals, and celebrations throughout South India
